Asparagus is one of spring’s brightest stars — here are 10 simple asparagus recipes that are both easy AND delicious!



It’s springtime, and that means asparagus season is in full swing! We have a pretty good-sized patch at the homestead, so for several weeks out of the year we have asparagus coming out of our ears.

As much as we love it (and we do!), it starts to get a little old after awhile, so for the last three years, I’ve been experimenting with different ways to prepare it to mix it up.

Here are a few of our favorites!

10 Simple, Delicious Ways to Prepare Asparagus

Roasted

  1. Super Simple Roasted Asparagus
    This is my go-to method of cooking asparagus when I am low on energy or time. Spread your stalks(any woody ends trimmed) on a baking sheet. Drizzle with olive oil (dispensers like these are perfect for drizzling!) and sprinkle with as much salt & pepper as you like! We also like a little garlic powder on ours. Roast in the oven at 450 degrees for 10-15, or until easily pierced with a fork.Voila! Super simple, and sooo yummy!
  2. Lemon Asparagus
    This one is very similar, and practically as easy, but with a little twist!

    Follow all directions above, but squeeze a little fresh lemon juice over the top and add a dusting (or more!) of Parmesan cheese.

Breakfast

  1. Scrambled Eggs with Asparagus
    This is my go-to breakfast right now! I love having eggs for breakfast (especially since I’m pregnant and trying to get plenty of protein!), and adding asparagus gives it an extra boost of healthy!To prepare, cut a few stalks into 1″ pieces. Sauté for a few minutes before adding your eggs, as the eggs will cook faster than the asparagus. You can season the pieces with a little S&P, but that’s up to you! Add your scrambled eggs and cook as usual. It’s as easy as that!
  2. Asparagus Quiche
    This one isn’t quite as simple as the others, but would be great for a brunch!

    I got my recipe for Crustless Asparagus Quiche from The Dinner Mom, but you can also find lots of great recipes on Allrecipes.com or Pinterest!
  3. Egg Muffin Cups
    I LOVE making egg muffin cups. I make up a bunch with whatever kind of random ingredients I happen to have on hand, then freeze them for those crazy rushed mornings (you know what I’m talking about!)**Update: I love doing these in my silicone muffin pan! It’s non-stick and a breeze to clean!

    I found my favorite directions for Customizable Egg Muffins from the blog Peanut Butter Fingers, so start there, and add some cut up asparagus as your diced vegetables.

Baked

  1. Cheesy Baked Asparagus
    Oh. my. goodness. This makes the most delicious asparagus we’ve tried so far. It is so, so yummy!To prepare, spread your stalkson a baking sheet. (I highly recommend lining the sheet with tin foil first. You’ll thank me later!), and drizzle with butter. I use about 2 Tbsp, but you could use whatever amount your heart desires! Sprinkle with onion powder, garlic salt, pepper, and a littleparmesan cheese. Bake in a 400 degree oven for 15 minutes. Take it out and top with about a cup of mozzarella cheese and a little bit of Italian seasoning. Return to the oven for an additional 5-7 minutes. So good!

Stovetop

  1. Simple Asparagus Sauté
    This is another quick and easy one. Simply chop up some asparagus andsautéit with butter and onions. Seriously. It’s that easy, but it will taste like you prepared a fancy dish!

    (Optional: Season with S&P, add someminced garlic, or get really fancy and add a little chopped bacon. But it’s plenty delicious without!)
  2. Creamed Asparagus
    This method is certainly not the healthiest or simplest option on my list, but it’s one of my husband’s favorites, so I will include it in his honor. 🙂I’ve only ever made it once, so I can’t claim to be a creamed asparagus master, but this is the recipe I used:

    I did add in some chipped beef, because “that’s how his mom made it.” (A phrase I hear often! 😉 )

Grilled

  1. Super Simple Grilled Asparagus
    Brush the stalks with olive oil and season with S&P. Grill about 5 minutes on each side. Bing, bang, boom, you’re done! (P.S. A grill pan makes it even easier! No more falling through the grates!)
  2. Marinated Grilled Asparagus
    Mix up the marinade:
    • 3 Tbls balsamic vinegar
    • 2 Tbls fresh lemon juice
    • 1 Tbls olive oil
    • 1 Tbls low-sodium soy sauce
    • 1/8 tsp black pepper

    Marinate for 30 minutes. Grill about 5 minutes on each side.
